Rosti Challange

Recently,
many friends have spontaneously tried making Rosti.
For Vday,
out of boredom...
However,
it was met with much failure.
Therefore,
inspired by their enthusiasm,
I've decided to try my hand at making Rosti.

It was originally a common breakfast eaten by farmers, but today is eaten all over Switzerland.
Many Swiss people consider rösti a national dish.
Rösti is made with potatoes which are grated
and depending on the frying technique,
possibly mixed with some butter or fat, or fried in oil later.
The grated potatoes are shaped inside of the frying pan.
They are most often shallow fried but can also be baked in the oven.

Ingredients: (Serves 2)
3 Medium sized potatoes
Salt
Pepper
1/2 Egg
1 tbsp Cornflour
Butter & Olive oil
(for frying)
Spring onion (optional)
Sour cream (optional)
Mustard (optional)
Here's what I did.
Step 1: Parboiled potatoes in salt water
the night before for 10mins
(potatoes should be slightly cooked and kinda raw still)
Allow it to cool,
then refrigerate.
Step 2:
Peel skin (should come off easily)
Grate with your largest grater(as below).

Step 3:
Add in cornflour, egg, salt and pepper.
Use fork to gently mix.

Step 5:
Melt butter and olive oil in pan.
(relatively huge amount)
Add in potato mixture, spread out
and gently press down.

Step 6:
Cook for ~8mins on medium heat,
wait till bubbles on surface to slightly subside.
Slide rosti onto plate,
flip plate onto pan to brown the other side.

Viola!
Rosti!
Serve immediately with sour cream,
spring onion and mustard :P
